Green Plantain or Banana Ceviche
(serves 4)This creative twist on traditional ceviche uses boiled green plantains or bananas in place of seafood. It's tangy, refreshing, and packed with bold Costa Rican flavor. A splash of Fresca adds a unique sweetness that balances the lime perfectly.
Instructions:
- 2 green plantains or 4 green bananas
- 1/4 white onion
- 1/4 red onion
- 1/4 sweet pepper
- 1/4 bunch of flat-leaf cilantro
- 1/2 cup lime juice
- 1 cup Fresca (soft drink)
- 1 teaspoon salt
- 1 teaspoon black peppe
Instructions:

Pollo Achiotado 'Achiote Chicken'

Ingredients:
- 4 chicken pieces (leg quarters)
- 1/2 white onion, chopped
- 1/2 sweet pepper, chopped
- 2 garlic cloves, minced
- 1 cup water
- 1/3 cup oil
- 1 teaspoon chicken bouillon
- 1 tablespoon annatto (achiote)
- A pinch of salt
Instructions:
- In a large skillet or pot, heat the oil over medium heat.

White Rice

- 1 teaspoon salt

- Add the minced garlic and sauté for about 30 seconds until fragrant, but not browned.
